We have entered into Day 2 of Vegetarianism. I go several days often without eating meat to begin with, so it doesn’t really feel like I’ve actually accomplished anything, as it’s something that I already do on a normal basis. Maybe by the time I go a month without meat, I’ll feel more proud of my efforts. I thought it might be a struggle to find food to eat, but so far, I don’t seem to have any problem. Thankfully, I love vegetables, and our company cafeteria has an AWESOME salad bar, so I’m sorted for most lunches (honestly, I need to stop being a lazy ass and just make something to bring for lunch. Baby steps). Tonight we’re having coworkers over for dinner, and I’m making fajitas. We still have some frozen chicken in the freezer, so I’m going to use that up for those wanting meat, and everyone else will be having rice and veggie fajitas. YUMMY!!! I’m thinking quinoa instead of rice…not sure yet though.
